Turn your leftover bread into versatile gluten free breadcrumbs with these great ideas:
Sugar & Spice Breadcrumbs
Mix with granulated sugar and cinnamon or mixed spice to use as a topping on puddings and ice cream dishes.
Combine with grated hard cheese like parmesan and chopped green herbs such as parsley or coriander. Use to coat chicken breasts which are baked in the oven and served with fresh green beans and skin on potato wedges.
Make your breadcrumbs last even longer by drying them out in an oven on a very low heat (about 150 degrees centigrade). You can store them in an airtight container for several months or freeze them for later use.
Alternatively, try using chunks of leftover bread in great recipes like this one;
Eggy Bread Bake with Leek & Tomato*
25g butter plus a little extra for greasing
200g white bread in chunks
2 leeks thinly sliced
2 garlic cloves, finely chopped
100g cherry tomatoes, halved
100g grated cheddar

Grease a baking dish and fill with torn bread.
Heat the butter in a pan until it starts to foam then add the leeks and garlic, cooking over a medium heat for 5 mins.
Spoon the leek mix over the bread and top with cherry tomatoes.
Beat the eggs with the cheddar, season to taste the pour over the bread.
Bake for 15-20 minutes until golden and puffy/
