What Is A Baking Stone? 

A baking stone is a large, flat cooking appliance that is traditionally used to cook bread based products. Because they can heat up to high temperatures they are particularly good at creating crispy bases, perfect for cooking a handmade pizza.  This large cast iron dish has a number of benefits over those made from real stone including: 

  • The cast iron surface heats up more quickly and is unlikely to develop ‘hot spots’ that can lead to an uneven finish or burnt spots. 
  • The cast iron version, whilst still quite weighty, may be lighter than traditional stone and can include handles to make it easier to manoeuvre. 
  • It can be easier to clean cast iron baking stones. 
  • It is more durable than stone, and is unlikely to crack or break  

This large cast iron baking stone from Andrew James is 12 inches (30cm) in diameter and features an integral handle to help you lift it in and out of the oven. You can also use this handle to hang the stone up when not in use. We’ve also given this stone a slightly concave surface to ensure that any batter you add during cooking won’t spill over onto your stove. 

Do I Use This On The Hob Or In The Oven? 

This baking stone is very versatile when it comes to using it. You can use it on your stove top and it is compatible with a range of hobs including gas, electric, ceramic as well as for cooking with ranges and agas. The baking stone can also be used inside the oven or why not try it on your barbeque in the summer for cooking drop pancakes for dessert. 

Can I Use This Baking Stone For Welsh Cakes?   

Absolutely, it’s great for Welsh Cakes, Pizza, Bread, Scones and more. There’s no reason why you can cook shop bought frozen chips, nuggets, and other convenience foods on this stone in an over to give them a nice, crisp finish, or you can make you own homemade and healthy versions of these foods. Other things you can cook on this stone include giant cookies, quesadillas, pretzels, apple strudel, pita breads, you can even chop you the veggies for your Sunday Roast, give them a generous coating of oil and let them sizzle on this stone. 

Do I Have To Season This Baking Stone? 

One of the great things about this baking stone is how easy it is to season. When you first use it apply a thin layer of vegetable oil on the surface with a kitchen towel or pastry brush, then pop it in the oven on a low heat and slowly increase the temperature until it is at the right level for your recipe. After use, wipe away any leftover food then wash the stone with hot water a stiff nylon brush. Towel dry and apply another thin layer of oil whilst the pan is still warm. If you are going to store it horizontally place some paper towels above and below to prevent a build-up of moisture and never let your baking stone air dry as this can lead to rusting.

Baking Stone Recipe For Quesadillas 

This dish is quick and easy to make and will soon become your standard go to recipe for quick snacks and mealtimes alike. 

Serves: 4 

Prep Time: 15 Mins 

Cooking Time: 5 Mins 

Total Time: 20 Mins 

Ingredients 

  • 4 Large Flour Tortillas 
  • 3 Chicken Breasts, Roasted and Shredded 
  • 260g Salsa 
  • 4 Spring Onions, Topped Tailed And Chopped 
  • 1 Tsp. Ground Cumin 
  • ½ Tsp. Salt 
  • ½ Tsp Dried Oregano 
  • 500g Grated Cheese 
  • Sour Cream, Guacamole & Salad to Serve 

Method 

  1. Place the baking stone in the oven and heat it up to 250C 
  2. Heat a large frying pan on the stove then add the salsa, spring onions, cumin, salt and oregano. Cook for around 6 – 8 minutes, stirring occasionally, then add the chicken and cook for another 2 – 4 minutes. 
  3. Melt the butter and brush one side of each tortilla. Place them butter side down on the baking stone and divide the chicken mixture between them, making sure you only cover one half of the tortilla. 
  4. Sprinkle over the grated cheese then fold the plain side of the tortilla over to create a semi-circle shape (a little like a Cornish pasty). 
  5. Bake for around 10 minutes until the quesadillas are golden brown and crisp. 
  6. Remove from the oven, cut into wedges, and serve with the sour cream, salad and guacamole.
