Vegan Waffle Recipe

This Vegan Waffle recipe is insanely good, even if you don’t have a plant based diet this recipe is a must-try as the coconut oil gives the waffle a unique sweet taste that instantly elevates flavour, and pairs well with fruit and/or maple syrup!
200g plain flour
3 tbsp. baking powder
¼ tsp salt
3 tbsp. sugar
300ml rice milk
3 tbsp. coconut oil
2 tsp vanilla extract
Beat the ingredients together for 30 seconds, don’t worry about lumps they will disappear when cooking. Allow the batter to stand for 1 minute.
Fill the scoop to the top and pour into your preheated waffle maker.
Pour in the mixture quickly, so that it gathers in the funnel, and gravity will evenly distribute the batter along the plates.
Cook the waffle for 4-6 min until the waffle is at the desired level of crispiness.
If the shape of the waffle is not perfect add another 25ml of rice milk and try again, repeat if necessary.
This vegan recipe is simply delicious, and is even tastier when topped with your favourite sweet ingredients, such as dairy free ice cream, whatever topping you fancy really!
