Vegan Glazed Chocolate-Avocado Cupcakes


Vegan cupcakes are not only delicious, they also allow you to get experimental with flavours and ingredients! In this recipe’s case it uses avocado instead of eggs, not only does it keep the mixture at the perfect consistency it also makes it all the more creamy and scrumptious!




1 avocado, pitted and peeled

210g all-purpose flour

240ml pure maple syrup

1 tsp. baking powder

95g unsweetened cocoa powder

3/4 tsp. baking soda

210g all-purpose flour

3/4 tsp. salt

180ml plain soy milk

80ml olive or coconut oil (whatever your preference)

2 tsp. vanilla extract

1/4 block soft silken tofu (from 14-oz. container), drained and patted dry

3 Tbs. pure maple syrup

1/8 tsp. salt

115g semisweet vegan chocolate, melted

1/2 tsp. vanilla extract










To make Cupcakes

Preheat oven to 180°C. Line a baking tray with 12 cupcake cases (or use a 12-hole muffin tray in you have one, line this also to prevent sticking.

Using the Andrew James electric whisk together flour, cocoa powder, baking powder, baking soda, and salt in bowl.

Purée avocado in the Andrew James food processor until smooth.

Add maple syrup, soy milk, oil, and vanilla, and blend until creamy.

Whisk avocado mixture into flour mixture using either an electric or hand whisk.

Now spoon the mixture across your 12 cupcake cases.

Bake 25 minutes, until cooked right through with centre (you can check this by inserting a toothpick or skewer, if it comes out wet with mixture they need a little longer)

Leave to cool on a cooling rack

To make Glaze

 Blend maple syrup, vanilla, tofu and salt in the Andrew James food processor until smooth.

Add your vegan chocolate to tofu mixture and blend until smooth.

Then once the cupcakes are cooled, dip them into the Glaze, pulling straight up from Glaze to form an attractive peak design.

Now top with whatever you wish, from vegan chocolate sprinkles to strawberry slices!
