Mother’s Day: Homemade Carrot Cake Recipe (By Angelica Day)

80g Cream Cheese
40g Icing sugar
100g Carrots grated
50g Apples grated
2 large Eggs
110g Self raising flour
Preheat the oven to 180c. Grease and line a loaf tin.
Mix all of the ingredients for the carrot cake, except the carrots and raisins, together in a bowl until well combined. Then, stir in the carrots and raisins.
Spoon the mixture into the tin and bake for 20 minutes, or until a skewer comes out clean. Cool for 10 minutes, then carefully remove the cake from the tin and set aside to cool completely on a cooling rack.
Meanwhile, if you want to know how to make carrot cake icing, simply beat the cream cheese, icing sugar and butter together in your stand mixer until fluffy.
Spread the icing over the top of the cake.
My first thought of Mother’s Day this year was joy – so much joy and pride this is my first Mother’s Day being a new mum to Isabella and it feels very strange. It’s a great time for florals and right on the cusp of spring, we’re getting early cherry blossoms and daffodils.
This year, let’s make the most of it.. there are so many things I want to bake. Sponge cake is perfect with a nice cuppa.
