Our ice cool guest blogger, missh_mac is back with ANOTHER delectable ice cream recipe for this Ice Cream Sunday.
Death by Brownie is such a fabulous flavour that even the distinct lack of sunshine outside (at time of writing) cannot stop you from enjoying this homemade ice cream.
Death by Brownie Ice Cream
480ml double cream 250ml skim milk 50g unsweetened cocoa powder 5 egg yolks 120ml honey 1 tablespoon vanilla extract Pinch of salt 12 brownie cubes, cut into small pieces (I used Sainsbury’s brownie bites)
1. Heat the cream and milk in a saucepan over medium heat until simmering. 2. Slowly add the cocoa powder and whisk constantly until smooth. Reduce heat to low and keep warm. 3. In a bowl, beat egg yolks and honey until smooth 4. Add the egg mixture to the cream mixture on a medium heat until it coats the back of a spoon 5. Remove from heat and stir in vanilla and salt 6. Let it cool, transfer to a container and chill in fridge at least 4 hours, or overnight. 7. Once ice cream is churned add half to your ice cream tub and mix in half the brownie then top the rest of the ice cream into the tub and repeat. Put in the freezer to harden.
