How to Host the Perfect Raclette

HOW TO HOST THE PERFECT RACLETTE MEAL

PREPARING FOR A RACLETTE MEAL IS SO SIMPLE AND EASY TO DO.

SOME SUGGESTIONS :





Chicken

Take a couple of chicken breasts and cut into strips
Marinade the chicken for a few hours before you have the raclette in any of the following

Spices – such as turmeric, cumin, ground ginger, chilli powder, coriander all mixed together
Sweet chilli sauce,
Curry paste such as Thai green, madras, korma, Tikka Massala
Teriyaki
A marinade of Garlic, ginger, chillies and olive oil is a particular favourite of ours.
You may also like to experiment with other marinades.

Simply cook the strips of chicken on top of the raclette



Surf and turf

Large steaks into thin strips
Raw king prawns

Cook the steak strips on the raclette to your liking
Sauté the King prawns in a little garlic butter in the mini pan
Serve the prawns and steak together. Delicious.

Alternatively just cook the steak on top of the stone / grill and eat by itself.
Cooking on the raclette makes the steak really tender and succulent; it really does melt in your mouth.


Steak with Parma ham and sun-dried tomatoes

Cook a few strips of steak on top of the stone
Remove the steak off the raclette and wrap sun-dried tomatoes and Parma ham around the steak to make a parcel
Place the parcel back on top of the raclette until the ham is crispy

Chicken may be used instead of steak for a tasty alternative

Fresh Fish

Any fish such as sea bass, monkfish, salmon and fresh tuna is superb cooked on top of the raclette. Simply cook the fish on top of the raclette, squeeze lemon juice over the top and serve but you could also marinade the fish if you wish

New Potatoes

Boil some new potatoes approximately 30 minutes before your raclette meal.

There are lots of different ways to use the potatoes on the raclette such as:

1. Cut a few of the cooked potatoes in half, place into your mini pans, top with sliced peppers and cheese then place underneath the grill. Delicious

2 Simply warm them on the top of the raclette and serve with some hams and cheeses.

3 Place some potatoes in the mini pans and cook with garlic butter.


Cold meats

Have a good selection of cold meats that your guests can choose from such as:

Good quality ham
Chorizo
Salami
Parma Ham
Serrano ham


A selection of Cheeses

Raclette cheese- you can buy actual raclette cheese from good cheese delicatessens.
Any cheese that melts such as Mozzarella, Gouda, Halloumi, Emmental, Brie, are all perfect for the raclette.

A selection of vegetables- already prepared

Mushrooms,
Peppers,
Tomatoes (vine tomatoes or sun-dried tomatoes)
Asparagus (pre-boil for a few minutes before hand)
Red onion

The mini pans



The mini pans can be used for cooking special combinations of food with the cold meats, cheese, and vegetables

Here are a few examples

Ham and vegetable melt

Place some ham in the bottom of the mini pan
Add some mushrooms and peppers
Top with a slice of raclette cheese
Grill under the raclette.

Asparagus wrapped in Parma ham with Raclette cheese


Cut two pieces of asparagus in half
Wrap a slice of Parma ham around the asparagus
Add a slice of raclette cheese
Melt under the raclette.
Stuffed mushrooms

8 mushrooms
Good quality pate
Chillies (optional)

Stuff the mushrooms with pate and fresh chilli then grill under the raclette.

The choices of food that can be used in the mini pans are endless.
Once you have had a few raclette meals you will certainly enjoy experimenting with different combinations.

To accompany the raclette

A simple salad
A vine tomato salad drizzled with balsamic vinegar
Fresh crusty bread.
Garlic butter
One of the main advantages of the raclette is that you don’t need to spend hours in the kitchen, preparing and cooking a meal. You are able to relax and enjoy the time with your guests; there is no reason to return to the kitchen at all.
